Tadka rice

Rice is the most staple food in South India .
It never goes without having rice at least a single meal everyday.



But the variety of rice used in Andhra and Telangana is mostly sona masoori and not basmathi.
So mostly prepared recipes with rice are puliyogare,lemon rice,vangibath with sona masoori and basmathi is used occasionally for biryani and fried rice.
So there are a wide variety of rice recipes in south india.

The interesting thing is that it doesn't need any extra vegetables .
And it tastes the best with left over rice.
We call it as talimpu annam.
Talimpu means tadka and annam means rice.

Ingredients:

Cooked rice/Left over rice : 1 cup
Green chillies                     : 2-3(according to the spice)
Onion                                  : 1 medium
Sesame seeds                       : 1 tsp
cumin seeds                         : 1 tsp
mustard seeds                      : 1/2 tsp
chana dal                             : 1 tsp
urad dal                                : 1/2 tsp
curry leaves                         : 6-7 leaves
oil                                         :2- 3 tsp
Turmeric powder                : 1/4 tsp
salt to taste
Method:

Chop the green chilies and onions .
In a fry pan add oil and when hot prepare the tadka.


Add cumin seeds.mustard seeds,chana dal , urad dal and fry them.
Then add the green chilies and onions and fry them well.
Then add the sesame seeds and let them fry as well.


Then add the salt ,curry leaves and turmeric powder and mix .


Now add the cooked rice and then mix well.


Cover it and cook on low flame for 5 minutes.


At this point if the rice is too dry ,can add a sprinkle of water and cover with a lid.


Can also  roasted groundnuts as a topping.
switch off and serve hot..
