and in our own India as well.
In India it is cooked in many ways .
It can be cooked in a gravy ,stir fry ,fried rice,biryani etc..
And now here it is one of a few versions of stuffed capsicum.
It can be stuffed with paneer,potato,besan ,cheese and many other.
One of them is here ...
Ingredients:
Capsicum : 7-8 (small size preferably)
onion : 1-1.5 cup(chopped roughly)
fried gram : 1 cup
red chili powder : 2 tsp (adjust accordingly)
cumin seeds : 1 tsp
dry coconut : 1/4 cup(chopped)
salt to taste
oil for shallow fry : 2 tbsp
Method:
wash the capsicum well.
chop off the tops and remove the seeds part from them.
Now in a blender jar ,add dry coconut,fried gram and cumin seeds and grind.
Now add the chopped onions and grind them coarsely and not a fine paste.
Now add salt and red chili powder and grind just that they mix well.
Stuffing is now ready.
Remove it into a bowl.
And now stuff this mixture into the capsicum and stuff it tightly or else it will come out while cooking.
Now take a heavy bottomed fry pan and add oil to it.
When hot carefully add these stuffed capsicums .
Cover and cook for a few minutes.
Now flip them and let them cook the other side as well.
Enjoy them with rice or roti or can eat it as its ..
