Pulav is a one pot dish made with rice and spices generally and also by incorporating the vegetables in it.
Mostly all veggies can be used in one dish or the entire pulav can be prepared using a single vegetable too.
so here is the recipe of soya alu pulav that can be done in pressure cooker.
Ingredients:
Soya nuggets: 1cup
potato : 1 large( peeled and cubed )
Basmathi rice : 1 cup
Elaichi : 3-4
cloves : 5
bay leaf : 1
cumin seeds : 1 tsp
cinnamon : 1 inch
onions : 1
tomatoes : 2
green chili : 5-6 ( adjust accordingly)
salt to taste
red chili powder : 1/2 tsp( can add more and skip green chilies)
dhaniya powder : 1 tsp
garam masala : 1/2 tsp
turmeric powder : 1/4 tsp
oil/ghee : 2tbsp
curd: 2tsp
ginger garlic paste :tap 1
Method :
Wash and soak the rice for a hour.
Mean while chop the onions and tomatoes finely.
Also soak the soya nuggets in hot water.
Now Take a Pressure cooker and add oil/ghee and let it heat.
Add all the whole spices and fry.
then add the green chilies and then the onions and fry till brown
Add the ginger garlic paste and let it fry.
now add the tomatoes and let them cook well till mushy.
and add curd to the mixture and let it cook for 2 minutes.
Squeeze out the water from soya and add them along with the cubed potatoes to it and mix well.
Now add the soaked rice to it and mix well.
saute for a minutes or so and add 1.5 cups of hot water to it .
Now add salt and garam masala and mix well.
Add a tsp of ghee while closing the pressure cooker and cook for 2-3 whistles and its done.
serve with onion and raita...
