But knowing about this vegetable since a couple of years made me to try once.
There are so many ways to cook this in the Telugu households.
Some of which are stir fry, raita(perugupacchadi),gravy curry,snake gourd ring bajji...
All of them are equally delicious and much simple to make.
And in this recipe the curry leaves powder adds a very distinct flavour to the dish.
so here is the simple recipe that goes well with rice and dollop of homemade ghee..
Ingredients:
Snake gourd : 1 cup (chopped into bite size)
red chili powder : 1 -1.5 tsp(adjust accordingly)
turmeric powder : 1/4 tsp
dhaniya powder : 1/2 tsp
curry leaves dried : 1/4 cup
oil : 2 tsp
coriander for garnish
salt to taste
Procedure :
Chop the gourd into bite size pieces and wash well.
Make a coarse powder of dry curry leaves .
Take a fry pan and add oil .
When hot,add jeera and mustard seeds .
When they splutter.add the gourd pieces .
Add salt and mix.
Cover and cook .
When done add the turmeric ,red chili ,dhaniya and curry leaves powder and mix well.
Cover and cook for one more minute.
Switch off.
Add the coriander leaves and mix.
Can also add a dash of lemon juice.
