Potato Amaranthus fry

 Green Leafy vegetables are to be included in our daily diet .

Amaranthus called as thotakura in telugu is one of them which has many essential vitamins and minerals and is also considered  more nutritious than all the other green leafy vegetables.

A wide variety of recipes are done with this such as dal,fry,fritters,chutneys ..

One such is here where potato is also added to make it kid

friendly and tasty as well.



Ingredients :

Garlic cloves : 10 -12 cloves

Onion            : 1 medium

Potato           : one large

Amaranthus : 1 big bunch( 2 cups chopped)

salt to taste

Oil             : 2 tsp

green chilies : 3 -4 (adjust accordingly)

Cumin seeds  : 1 tsp

Chana Dal     : 1 tbsp

Procedure : 

Wash the leaves well and chop them .

Also chop the onion and potato into bite sized cubes

Peel the garlic cloves and chop the green chilies as well.

Now take a kadai and add oil and let it heat.

Add cumin seeds,chana dal and let them fry.

Then add the garlic and green chilies and let them fry.

Now add the onion and potato pieces .Cover and cook till soft.

Now add the chopped leaves and mix well.

Don't cover with the lid and also not add salt now as the leaves tend to loose  so much water .

When cooked finally add salt and switch off .

Do not add too much salt as leafy vegetables require less salt..

Can be served with roti or rice
